Here at Binnilidh Mhor, we take pride in using quality produce and showcasing some of the best local and Scottish Food producers in the food we prepare. Scotland's food and drink comes from unspoilt habitats and varied weather, which are perfect for producing a wide variety of high quality fresh fruit and vegetables, fish, meat and much more.

 

We are delighted to have achieved VisitScotland’s Taste Our Best accreditation as recognition of our sourcing policy and the quality food and drink we provide.

 

Below is a summary of the provenance of the produce used in our menus, where possible and in season.

Meat

Meat

We source our game from a neighbouring Highland Estate Ceannacroc, Glenmoriston and Lochaber Game, a local family business based in Fort William. 

Beef is sourced from award winning and long established butcher Duncan Fraser & Son of Inverness.  Our guests love the quality and flavour of their steaks.

Cured oak smoked venison comes from the Great Glen Charcuterie at Roy Bridge who only uses wild Scottish venison.

Cockburn’s of Dingwall produce the best award winning haggis and black pudding.  It is so popular some of our guests go out of their way to order online!

Chicken is also supplied by Lochaber Game.

Beef olives come from the award winning butcher Simon Howie. 

Seafood

We use a number of suppliers to enable us to source the best Scottish fish. 

For delivery of a consistent quality our Scottish salmon fillet is sourced from Brake Brothers

Our smoked salmon is from Dundonnel smoke house on the west coast, chosen for the flavour and quality.

Scottish seabass is sourced from Lochaber Game. 

Fruit and Vegetables

We endeavour to use the highest quality of fruit and vegetables.  When in season this is sourced from the Glen itself but demand on occasions requires us to seek other sources.

Our intention is to grow our own in time.

 

Albert Bartlett potatoes in the Angus region of Scotland produce the tastiest potato which we use for many of our dishes.

 

The fertile lands of the Angus region are possibly the most recognised and renowned for producing the highest quality soft fruits and vegetables.  We endeavour where possible to source from this region.

Our eggs are free range and organic, and do come from Glenmoriston’s most pampered hens.

 

Our creamy Scottish butter is from Graham’s Dairy, Stirling and our milk is always Scottish.

Preserves and Honey

Preserves and Honey

Our breakfast menu features homemade blackcurrant jelly and strawberry jam.  The blackcurrants are all hand-picked from the glen and only Scottish strawberries are used for the jam.

 

Our own bees produce Inverness-shire Blossom and Heather honey. Producer F&J Millwood, Inverness
